We are in our infancy but have already managed to create a small circular economy whereby our 5 types of tomatoes, basil, eggplant and zucchini have already managed to fulfill the needs of our main kitchen at the Santiago de Alfama Boutique Hotel in Lisbon.  Each year we will endeavour to improve on that to ensure the best possible produce makes it onto your plate, both at the Green House and at our sister restaurant, Audreys.
